You can get water UNDER its freezing temperature, without it freezing!
Then when you agitate the water, it will freeze right before your eyes! This is known as "supercooling". Water needs to crystallize in order to turn into ice. If the water can't crystallize it can stay in an unstable liquid form.
Water can also be heated past its boiling point without turning into gas. This is called "superheating".
